I’ve been really craving pizza lately. Hopefully I’m not pregnant. What style should I go for. New York, Sicilian, Neapolitan, or Chicago? A lot of Italian cooks moved to my AO on account of our relatively cheap property values, so I can find good examples of all four styles. Probably going to pair it with some red wine. My brother is visiting our family farm in Calabria, so I’m feeding my envy* with mozza, sauce, bread and wine.

*not really envious, my bro’s been working his ass off doing what he loves, and I’m glad he’s getting to see where our great grandfather grew up.

*UPDATE*

Ended up going Neapolitan. There’s a legit Neapolitan place I forgot I hadn’t tried yet. They did not disappoint. I ordered a couple  margheritas. Cooked up some mushrooms in a garlic sauce with basil and ate them as a side.

Tonight’s our annual bacon party.  One of the dishes I’m bringing: miniature bacon pizzas, but instead of tomato sauce, donair sauce.

Gotta d o h ome made pizza , with dough & sauce from scratch.

Don’t forget to use real San Marzano tomatoes for the sauce. Remember to use both Provolone & Mozzarrella cheese, just one is inadequate . Buy both in chunks so you can shred by hand, none of that pre-shredded garbage.

Make two pizzas, one with red sauce / cheese / pepperoni, the other with oil / garlic / cheese / tomato chunks / basil. You can add Ricotta if you fancy to the second.

I make homemade pizza at least twice a month using real cheese from my local Italian grocer. You’ll get disowned from my family if you buy fake mozzarella. As far as tomatoes, I grow my own. They’ve been growing here longer than they have in Italy.

However, it’s impossible to replicate a well made  brick oven pizza at your house (unless you have a brick oven), and that’s what I’m craving.

If you have a choice in the matter, then the answer is always Chicago-style. That’s a pizza that deserves reverence. Detroit-style is a close second.

Now, if you don’t legitimately care and just want...you know...whatever, flat bread with sauce and cheese...then any of the the other kinds are fine. I find that compared to Chicago or Detroit pizza, everything else is just pizza. And JUST PIZZA is fine, too! That’s one of the great things about pizza...I’ve had a friend relate it to sex in the sense that hey, good pizza is GOOD pizza, and that’s good...and bad pizza is actually still kinda good because hey, it’s pizza.

So I guess the real question is...is your craving for REALLY GOOD PIZZA or...hey, you know, why not pizza?

I’ve seen too much humanity proclaiming what they are doing is for god or for god when it’s just for their own gains.

But I’ve also witnessed the actions of many onto others for no gains, merely to help those in need be they an animal or their fellow Man.

The god squad irk me so much (followed by vegans) about going to church, either coming to my front door or standing on their soap box in the middle of town proclaiming god will smite me down for not believing in him (well, I’m 39 so I can’t be high on his/her to- do list).

Pizza Hut is several orders of magnitude better than Pizza Ranch.

CiCi's Pizza is several orders of magnitude better than Pizza Ranch. That is not hyperbole. Pizza Ranch had the worst pizza I've ever tasted by far.

I like that analogy. I’m not a pizza snob, but I can also appreciate the difference between cheap pizza and good pizza. But yeah, unless there is something seriously amiss, it’s fucking pizza. Enjoy it.

My gut always leans towards NYC style pizza, mosty because I grew up going to the east coast over the summer and eating pizza all over the city. There’s definitely an emotional connection.

However, the best pizza I’ve ever had was in Mira, Italy (small town outsode Venice). It was in between Neapolitan style and NY style. Had the cheese/crust/sauce of a Neapolitan but was the size of a NY pizza. Was topped with white asparagus and a medium cooked egg.

In ended up going Neapolitan. Went on a short hike, and the 90 degree would not have paired well with a heavy Chicago pizza lunch.

That’s fair - if you’re having pizza early in the day, one has to weigh how the meal will make you feel for the remainder of the day. Heavy pizzas will park you on the couch for hours.

yeah, I’m not a pizza “purist;” it’s all good (though I’ll fling crap at NY style just to piss off New Yorkers.)  usually when I go for a Neapolitan style I stick with the traditional Margherita. 

if you haven’t had a Detroit style, give one a shot if you ever get the chance. Buddy’s Pizza (regional chain in Metro Detroit) is the genesis of the style, but ever since Gus Guerra sold it off they’ve kind of done the “chain” thing and watered it down. If the cheese around the edges isn’t real, real dark, then it’s not quite right.  And no, it doesn’t tasted burned.

Haven’t had Detroit style. That looks good. I like the crispy cheese instead of a thick  crust. I’ll be taking my forst trip to Michigan this summer, so I’ll have to try some.

In between Saginaw and Flint. My wife’s family is from there. My wife’s grandmother has Alzheimers and it’s getting pretty bad, so we’re gonna go see her. We’ll be headed up to Mackinac island for a day. I’m trying to get down to Detroit, but my wife’s family are very small town Michigan types and are afraid of Detroit.

At a hot rod show down in Belmont Shores a religious zealot was annoying the fuck out of everyone at the show by walking down the street with his megaphone. The various car owners found an ingenious solution that the crowds also loved. As he got anywhere near a car, the owner of the car would fire up the engine and rev the hell out of it. You could tell where the zealot was by how far from the exhaust noise you were. The best ones were the drag racers as they really shattered the quiet. Somewhat surprisingly, he got the hint and left, finally letting us enjoy the show.

What gets me the most is people, ‘living by the book’, coming to me, telling me I shouldn’t live my own life I s hould live it by the book.

Years ago if jehovahs witnesses came round a police car would be sat at the end of the road, to move them on if they stayed at the same door for too long. It was partially to stop people being annoyed by them and partially so people didn’t hurl so much abuse back at them. But the police stopped and now the JWs come around with kids and place the kids between them and the front door.

I just tell people who come to my door, ‘I don’t want new windows,  PPI or religion’.

I’m intrigued that there actually are different styles!

We always make our own from the bases on up. Mostly because the nearest pizza place is probably an hour and a half away and also garbage.

Actually tonight (Sunday night) is pizza night. One will have Hungarian salami on it and the other...smoked salmon.

Italy wasn’t historically a unified nation (one could argue it still isn’t), so each region has it’s own cuisine and culture. My great grandfather spoke a Calabrese dialect of Italian along with Arbëreshë (medieval Albanian dialect) which northern Italians probably wouldn’t be able to understand.

Yo u had all these different people migrate to the US east coast where they created a new hybrid  culture. Then you had the kids of these people migrate West where they came up with even more derivatives.

It’s not like German and English food, which always kind of sucked, so no one bothered to build upon it.

I once had smoked salmon pizza at a kosher place in New York . Good stuff.

I have a Russian last name, and there’s both a Russian Orthodox church and a Russian Jehovah’s Witness meeting place in my neighborhood (along with an Anglican church #America). Had a gaggle  of babushki come to my house after I bought it looking to preach to me. I answered the door in just shorts (I’m covered in various symbolic tattoos) and they realized I was a lost cause and have left me alone since. However, they still send me literature in Cyrillic.
